Mealtime Makeovers...Pot Luck Special PDF Print E-mail

As troop leaders of Brownie Troop 80, my good friend Lana and I ended our season at the pot luck awards banquet. We said goodbyes to the girls hoping that we will have a great new group to grow and learn with next year!
Pot lucks are awesome places to find new foods to try and then track down the creator and snag the recipe. As Lana and I sat behind the table admiring the heaping plates as they passed by, I saw one casserole that I had to comment on. Turns out, it was Lana’s!
After several minutes of begging and pleading (not really, I only asked once) I convinced her to scribble down that recipe on a piece of an envelope for me to make at home. You know that any recipe handed down from Cindy Regier (Lana’s mom) is most likely a good one, so I am blessed to have added this to my list of new favorites. Simple, delicious and a kid and adult pleaser at that! See for yourself!


Lana’s Macaroni Casserole

1 cup elbow macaroni
1 can cream style corn
1 can whole kernel corn
8 ounces Velveeta cheese (melted)
1/2 cup margarine (sliced)
Preheat oven to 350°F.
Combine all ingredients in a large bowl. Place in an 8x8 baking dish.
Cover and bake for 30 minutes. Uncover and bake an additional 30 minutes.
Serve warm.
